Coq Au Vin and Bananas Foster
To get this meal to the table all at the same time: Cut up the chicken and make the stock the day before. Chill the stock over night. Chop the pancetta ealier in the day and set aside. Prep the finishing veggies earlier in the day and cook them during the last cooking time for the chicken. The pecans can be candied several days in advance. Store them in an air tight sealed container until you finish the dessert. Prepare the sauce for the dessert up to just before adding the bananas but finish the dssert just before serving. It never did seem quite right.I just do not resemble in any way anyone in my family.I feel at times my father is a little suspicious of my origins, however he has not suggested a DNA test yet. Easy for him to get a sample of mine, we share the same bathroom. I do not appear to be loved less than my brother and sister, although they do joke when looking through family photos and say things like ”Still can’t find a match for Lenny.” It is unnerving at times, although I really seldom think of it. I am taller, smarter, and better looking than my siblings. Not bragging, it is...
Read MoreDoctors of BC policy paper gives significant boost to family caregivers in BC
With one million British Columbians providing 70-75% of the care for family and friends faced with disease, disability or frailty due to aging, family caregivers need and deserve to be formally recognized as part of BC’s health care system. Family Caregivers of British Columbia, who was consulted for the recently released policy paper from Doctors of BC, “Circle of Care: Supporting Family Caregivers in BC”, supports the inclusion of family caregivers in patient and family centred care. “This is a significant boost for family caregivers in BC,” says Barb MacLean, executive...
Read MoreBC Seniors Advocate releases results of landmark home support survey.
Isobel Mackenzie, Seniors Advocate for BC, released a report today highlighting results of BC’s first ever province-wide survey of home support clients and their family members. “We have heard the collective voice of almost 10,000 seniors and their family members on how they rate the quality and effectiveness of our provincial home support program,” said Mackenzie. “There was some good news in the results, as well as clear messages about where there are opportunities for improvements,” Mackenzie added. Survey results show that, overall, clients are satisfied with the quality of...

Read MoreProcrastination is threatening the Cowichan River.
The Cowichan is one of its most productive rivers on the west coast. It is the heart and soul of the Cowichan Valley. Without it agriculture, the wine industry, tourism, hundreds of industrial jobs, fishing and the traditional way of life of the first nations would cease to exist as we know it. For years now, because of climate change, the level of the rivers source, Cowichan Lake, has been too low to address the human demands made on it through the summer and fall and to maintain the salmon and trout stocks. The provincial and regional governments both know this. No more studies are...

Canada is a nation defined by winter, but it shone at the Summer Olympics in Rio de Janeiro. With a few competitions remaining before the closing ceremony of the Games at 3 p.m. today, Canada’s total of 22 medals equalled its best in a non-boycotted Summer Olympics, a record set at Atlanta in 1996. Canada is ranked 20th based on its four gold medals at Rio, but 10th based on total medals. Athletes associated with Greater Victoria contributed with the silver medal by rowers Lindsay Jennerich and Patricia Obee, and the bronze medals by swimmer Hilary Caldwell, the Canadian women’s rugby...
Read MoreThis weekend we are supposed to contemplate how lucky we are to live in British Columbia.
That’s the theory, anyway. Reality, for most of us, is more about beaches, barbecues and baseball tournaments. And that’s how it should be at the height of summer in Canada’s astonishing, fantastic, unbelievable province. Life is for living, after all. Whether dipping a paddle in some magnificent lake or river, pitching a tent and listening to wind in the canopy or the boom of surf, strolling the seawall — or just kicking back on the patio with a craft beer from one of B.C.’s three-score breweries or wine from one of 160 vintners while grass-fed Nicola Valley steaks...
Read MoreThe 3 ring circus that is American Politics.
The Presidential election campaign that is currently underway in America is truly frightening. How can a country that is so rich in so many ways be so bereft in moral and social leadership. Scaremongering and appealing to the masses is nothing new. Hitler perfected it. It’s easy to offer a rosy future with lies and innuendos. It’s easy to inflame passion with rhetoric and no substance. It’s easy to be smug and pompous when you already have everything. “Tough on Crime”, started by Ronald Reagan, and emulated by many others around the world does not work. The...
Read MoreThe very concept of self policing by organisations of any sort will never be acceptable to the general public.
The authority to do so renders the outcome suspect, self-serving and meaningless. All oversight mechanisms must be conducted be a 3rd party. No-one should be exempt from this, not politicians, licensing authorities, law enforcement, the military, labour or professionals organisations. The Mount Polley disaster is a prime example of what can happen without oversight and legal liabilities. We must learn from examples like this, especially with projects like the Site C dam, and John Hart expansion project here on the island, currently under construction. Click the link below to see...

Acetaminophen (Tylenol) This one reliably kills cats. For some reason, I’ve had some clients give their cats this medication to help bring down fevers. The problem is that this drug causes liver damage and methemoglobinemia (damage to the red blood cells). A single tablet given to a cat can cause death within forty eight hours. For dogs, it can be used, but overdosing is an issue. A regular strength tablet (325 mg) can seriously harm a 14 pound dog. Intensive treatment and specialized medications are required to counteract the toxic effects of this drug. Ibuprofen (Advil) The number one...
